Poultry Recipes - Barley-Fried Chicken

Ingredients

  • 900g/2 lb boned chicken, chopped

  • 100g/4 oz/1 cu oats, ground

  • 50g/2 oz/1/2 cup barley ground

  • 3 onions, minced

  • 5ml1/ tsp grated ginger root

  • 1 clove garlic minced

  • 5ml/1 tsp garam masala

  • 5ml/1 tsp chopped green chilies

  • 1 egg

  • 1 egg yolk

  • 15ml/1 tbsp lemon juice

  • 30ml/2 tbsp chopped fresh mint

  • 15ml/1 tbsp sesame seeds

  • oil for deep-frying


Method:

  1. Mix together all the ingredients except the oil and knead to a pliable mixture. Divide into 16 and shape into flat patties about 2.5cm/1 in thick.

  2. Heat the oil to almost smoking point then lower the heat for 1 minute. Fry a few patties at a time for about 6 minutes then turn them over and dry for a further 5-6 minutes until browned.

  3. Drain on kitchen paper and serve at once.
