Poultry Recipes - Chicken Bhoona

Ingredients

  • 4 boneless chicken breasts, skinned and cut into strips

  • 90 ml/6 tbsp natural (plain) yoghurt

  • juice of 1 lemon

  • 3 cloves garlic, crushed

  • 5 ml/1 tsp ground turmeric

  • 15 m/1 tbsp paprika

  • seeds from 3 cardamom pods

  • salt

  • 60 ml/4 tbsp ghee

  • 2.5 ml/1/2 tsp garam masala

  • 30 ml/2 tbsp chopped fresh coriander (cilantro)


Method:

  1. Place the chicken strips In a bowl and mix in the yoghurt, lemon juice, garlic, turmeric, paprika, cardamom seeds and salt. Melt half the ghee and stir into the marinade. Cover and refrigerate for 2 hours.

  2. Heat the remaining ghee and fry the chicken and marinade for 10 minutes, stirring. Add the garam masala and coriander and fry for a further 10 minutes until the chicken is tender.
