Poultry Recipes - Chicken Chili Fry

Ingredients

  • 1 chicken, skinned and cut into 4

  • 2.5 cm/1 in ginger root

  • 5 cloves garlic

  • 5 green chilies

  • 1/2 lemon

  • salt and pepper

  • 4 eggs, beaten

  • 100 g/4 oz/1 cup breadcrumbs

  • ghee or oil for deep-frying


Method:

  1. Place the chicken in a heavy-based pan, just cover with water, bring to the boil, cover and simmer gently for about 45 minutes until tender. Drain.

  2. Grind together the ginger, garlic and chilies. Rub the chicken with the lemon then coat with the ground paste and season with salt and pepper.

  3. Dip in egg then breadcrumbs, then egg and breadcrumbs again. Fry in hot ghee or oil until crisp and browned. Serve at once.
