Chicken in Coconut Milk
Ingredients
60 ml/4 tbsp oil
8 chicken pieces, skinned
2 onions, chopped
5 cloves garlic, chopped
5 cm/2 in ginger root, chopped
4 dried red chilies
4 cloves
2.5 cm/1 in cinnamon stick
5 ml/1 tsp fenugreek seeds
10 ml/2 tsp coriander
(cilantro) seeds
10 ml/2 tsp cumin seeds
75 ml/5 tbsp lemon juice
600 ml/1 pt/2 1/2 cups coconut
milk
salt
2-3 curry leaves
15ml/1 tsp sesame seeds,
toasted
Method:
Heat the ghee and fry the
chicken until golden brown the remove from the pan.
Blend the onions, garlic, ginger, chilies, cloves,
cinnamon, fenugreek, coriander, cumin seeds and
lemon juice to a smooth a paste in a blender or food
processor. Adding a little water if necessary.
Add this mixture into the pan
and fry gently for 5 minutes until lightly colored,
stirring continuously. Add the coconut milk and salt
and return the chicken to the pan.
Bring to the boil, cover and
simmer gently until the chicken is tender and the
sauce is thick. Serve garnished with curry levees
and sesame seeds.
