Poultry Recipes - Chicken Kebabs

Ingredients

  • 4 chicken breasts

  • juice of 1 lemon

  • salt

  • 250 ml/8 fl oz/1 cup natural (plain) yoghurt

  • 45 ml/3 tbsp oil

  • 4 cloves garlic, crushed

  • 2.5 cm/1 in ginger root, grated

  • 5 ml/1 tsp ground cumin

  • 1.5 ml/1/4 tsp chili powder

  • 2.5 ml/1/2 tsp garam masala

  • 5 ml/1 tsp paprika


Method:

  1. Remove and discard the fat, skin and bones from the chicken and cut into 2.5cm/1 in cubes. Sprinkle with the lemon juice and salt and leave to marinate for 30 minutes.

  2. Mix the yoghurt with half the oil. Blend in the garlic, ginger, cumin, chili powder, garam masala and paprika. pour over the chicken and marinate in the refrigerator overnight.

  3. Thread the chicken pieces on to metal skewers and bake in a preheated oven at 240C°/475F°/gas mark 9 for 15 minutes. Baste with the marinade and remaining oil, turn over and bake for a further15 minutes.
