Ingredients
30 ml/2 tbsp ghee
2
onions, sliced
3 cloves garlic, chopped
2.5 cm/1 in ginger root,
chopped
4 green
chilies, slit
1 chicken, skinned and cut into
portions
2 tomatoes, skinned and chopped
1
cinnamon stick
4 cardamom pods
salt
250 ml/8 fl oz/1 cup hot
water
100 g/4 oz dried
apricot halves
2.5 ml/1/2 tsp saffron strands
45 ml/3 tbsp hot milk
Method:
Heat the ghee and fry the
onions, garlic, ginger and chilies until
lightly browned. Add the chicken and fry until
browned.
Add the tomatoes,
cinnamon, cardamom and salt and fry over a
gentle heat for about 30 minutes
until the chicken is almost cooked.
Add the
apricots. Crush the saffron in the milk and add
to the pan. Continue cook for about 5 minutes
until the chicken is tender and the apricots are
just soft.
