Poultry Recipes - Chicken Palak
Ingredients

30 ml/2 tbsp ghee

2 onions,
sliced

5 cloves garlic, crushed
-
2 cloves
-
5 ml/1 tsp ground coriander (cilantro)

2 tomatoes, skinned and chopped
-
450 g/1 lb spinach, chopped

salt and pepper

chicken, skinned and cut into portions
Method:
-
Heat the ghee and fry the
onions and garlic until soft. Add the cloves,
coriander, tomatoes and spinach and cook for 5
minutes until the spinach is softened and wilted.
-
Season with salt and pepper and
add the chicken. Cover and simmer gently for about
45 minutes until the chicken is tender.
