Poultry Recipes - Chicken Palak

Ingredients

  • 30 ml/2 tbsp ghee

  • 2 onions, sliced

  • 5 cloves garlic, crushed

  • 2 cloves

  • 5 ml/1 tsp ground coriander (cilantro)

  • 2 tomatoes, skinned and chopped

  • 450 g/1 lb spinach, chopped

  • salt and pepper

  • 1 chicken, skinned and cut into portions


Method:

  1. Heat the ghee and fry the onions and garlic until soft. Add the cloves, coriander, tomatoes and spinach and cook for 5 minutes until the spinach is softened and wilted.

  2. Season with salt and pepper and add the chicken. Cover and simmer gently for about 45 minutes until the chicken is tender.
