Poultry Recipes - Chicken with Sweet-corn

Ingredients

  • 60 ml/4 tbsp ghee

  • 3 onions, sliced

  • 5 ml/1 tsp black peppercorns

  • 4 dried red chilies

  • 15 ml/1 tbsp ground coriander (cilantro)

  • 5 ml/1 tsp ground turmeric

  • 50 g/2 oz grated (shredded) coconut

  • 600 ml/1 pt/1 1/2 cups coconut milk

  • 450 g/1lb chicken meat, cubed

  • 2-3 curry leaves

  • 5 ml/1 tsp mustard seeds

  • 225 g/8 oz sweet-corn


Method:

  1. Heat half the ghee and fry 1 onion and the spices until lightly browned. Grind the mixture and mix with the turmeric, coconut and coconut milk.

  2. Add the chicken and curry leaves, bring to the boil, cover and simmer for about 25 minutes until tender.

  3. Meanwhile, heat the remaining ghee and fry the mustard seeds until they start cracking. Add the remaining onions and fry until lightly browned.

  4. Add to the curry with the sweet-corn and heat through gently. Serve hot with rice and vegetables.
