Poultry Recipes - Chicken with Vegetables and Mushrooms

Ingredients

  • 45 ml/3 tbsp ghee

  • 3 onions, sliced

  • 1 chicken, skinned and cut into portions

  • 1 cm/1/2 in ginger root, sliced

  • 3 green chilies, sliced

  • salt and pepper

  • 250 ml/8 fl oz/1 cup boiling water

  • 225 g/8 oz cauliflower florets

  • 50 g/2 oz peas

  • 5 ml/1 tsp cumin seeds

  • 3 dried red chilies

  • 2 tomatoes, skinned and halved

  • 100 g/ 4 oz button mushrooms

  • 100 g/4 oz Paneer, diced

  • 30 ml/2 tbsp chopped fresh coriander (cilantro)


Method:

  1. Heat the ghee and fry the onions until golden then remove from the pan. Add the chicken  and fry for 15 minutes until half-cooked. Add the ginger, chilies, salt and pepper and fry for 5 minutes.

  2. Add the water and simmer gently until the chicken is tender, stirring occasionally. Remove the chicken from the sauce and keep it warm.

  3. Add the cauliflower, peas, cumin seeds and chilies to the chicken sauce and simmer for 10 minutes, stirring. Add the tomatoes, mushrooms and paneer and cook for 5 minutes, stirring.

  4. Arrange the chicken on a serving plate with the vegetables around the edge and pour over the sauce. Garnish with coriander.
