Poultry Recipes - Chicken in Vinegar

Ingredients

  • 1 chicken, skinned and cut into portions

  • 1.2l/2 pts/5 cups wine vinegar

  • 30 dried red chilies

  • 10 cloves garlic

  • 100 g/4 oz cumin seeds

  • 900 ml/ 1 1/2 pts/3 cups gingelly oil

  • 100 g/4 oz jaggery


Method:

  1. Boil the chicken in half the wine vinegar for about 30 minutes until tender. Grind the chilies, garlic and cumin seeds to a paste with a little of the wine vinegar.

  2. Heat the oil land fry the ground paste over a low heat for a few minutes.

  3. Add the chicken remaining wine vinegar and jaggery and simmer until the sauce has thickened.
