Ingredients
1 chicken, skinned and cut into
portions
250 ml/8 fl oz/1 cup natural
(plain) yoghurt
2 onions, chopped
10 garlic cloves, crushed
2.5 cm/1 in ginger root,
chopped
10 ml/2 tsp ground coriander
(cilantro)
5 ml/1 tsp chili powder
2 onions, sliced
45 ml/2 tbsp wine vinegar
2.5 ml/1/2 tsp sugar
2.5 ml/1/2 tsp salt
250 ml/8 fl oz/1 cup oil
juice of 1 1/2
limes
15 ml/1 tbsp
chopped fresh coriander ( cilantro)
Method:
Prick the chicken all over
with a fork. Mix together the yoghurt, onions,
garlic, ginger, coriander and chili powder and
nib into the chicken. Leave to marinate
overnight.
Soak the sliced onions in
the wine vinegar for 1 hour. Stir in the sugar
and salt and leave to stand until they turn
pink. Put the chicken and marinade into a pan,
cover and simmer for about 45 minutes until the
chicken is tender and the juices have dried up.
Heat the oil and fry the
chicken pieces until lightly browned. Arrange the
chicken on a serving dish and squeeze over the lime
juice. Serve garnished with coriander. Serve the
onions separately.
