Drumsticks
Ingredients
1.5 kg/3 lb chicken drumsticks,
skinned
juice of 1 lemon
4 cloves garlic, chopped
1
cml1/2 in ginger root, chopped
pinch of pepper
2.5 ml/1/2 tsp garam masala
1.5 ml/1/4 tsp ground red chili
2.5 ml/1/2 tsp paprika
2.5 ml/1/2 tsp ground coriander
(cilantro)
2.5 ml/1/2 tsp ground cumin
30 ml/2 tbsp
natural (plain) yoghurt
15 ml/1 tbsp oil
Method:
Squeeze the lemon juice
over the drumsticks and set aside. Puree the
remaining ingredients to a fine paste, stir into
the chicken, cover and refrigerate for 4 hours. Place the drumsticks on a flat baking
tray and brush with the marinade.
Bake in a preheated oven at 180°C/250°F/gas mark 4 for about 25 minutes until
cooked through and browned. Serve hot with
chutney.
