Poultry Recipes - Coriander Chicken

Ingredients

  • 5 cloves garlic, chopped

  • 2.5 cm/1 in ginger root, chopped

  • 1 chicken, skinned and cut into 8

  • 60 ml/4 tbsp ghee

  • 50 g/2 oz/1/2 cup flaked almonds

  • 50 g/2 oz/1/2 cup raisins

  • 225 g/8 oz Khoya

  • 600 ml/1 pt/2 1/2 cups natural (plain) yoghurt

  • 5 ml/1 tsp ground turmeric

  • salt

  • 10 green chilies, slit

  • 45 ml/3 tbsp chopped fresh coriander ( cilantro)

  • 600 ml/1 pt/2 1/2 cups coconut milk


Method:

  1. Grind the garlic and ginger to a paste then rub it into the chicken pieces. Heat the ghee and fry the chicken until browned then remove from the pan.

  2. Add the almonds and raisins to the pan and fry for 1 minute. Blend the khoya, yoghurt, turmeric and salt and add it to the pan with the chicken. Simmer until only a little liquid is left.

  3. Add the chilies and simmer until dry. Add the coriander and coconut milk and simmer gently until the chicken is tender and the ghee appears on the surface.
