Liver
Ingredients
450 g/1lb chicken livers
150 ml/1/4 pt/2/3 cup natural
(plain) yoghurt
2 onions, sliced
6 cloves garlic
2.5 cm/1 in ginger root
2 sticks celery, chopped
30 ml/2 tbsp ghee
6 cloves
2 cinnamon sticks
2 cardamom pods
5 ml/1 tsp ground turmeric
2 green chilies, chopped

Method:
Chop the liver into 2.5
cm/1 in pieces
and arrange them on skewers. Leave to marinate in
the yoghurt. Blend 1 onion, the garlic, ginger and
celery to a paste.
Heat the ghee and
fry the cloves, cinnamon and cardamom for 2 minutes,
Add the ground spices, turmeric and chilies and fry
for 15 minutes until browned.
Add the liver
kebabs and remaining onion and simmer over a low
heat for about 10 minutes until the liver is cooked
and the sauce has thickened.
