Poultry Recipes - Duck with Nut Stuffing

Ingredients

  • 1 duck, boned

  • 45ml/3 tbsp ghee

  • 1 onion, chopped

  • 2 cloves garlic, chopped

  • 10ml/2 tsp ground cumin

  • 5ml/1 tsp ground cardamom

  • 10ml/2 tsp ground cumin

  • 2.5ml/1/2 tsp ground turmeric

  • 100g/4 oz/1 cup breadcrumbs

  • 75g/3oz/3/4 cup cashew nuts

  • 50g/2 oz/1/3 cup raisins

  • 30ml/2 tbsp chopped fresh coriander

  • salt and pepper

  • 1 egg, beaten


Method:

  1. Wash the duck and pat dry on kitchen paper. Heat the ghee and fry the onion and garlic until soft and golden. Add the spices and fry for 2 minutes.

  2. Stir in the breadcrumbs, nuts, raisins, coriander, salt and pepper then bind with the egg. Stuff the duck with the stuffing and sew cloves.

  3. Weigh the stuffed duck the place it on a rack in a roasting tin and prick the skin with a fork.

  4. Cook in a preheated oven at 180C/350F/gars mark 4 for 35 minutes per 450g/1 lb. Slice thickly to serve.
