Poultry Recipes - Fried Spiced Chicken

Ingredients

  • 225g/8 oz chopped fresh coriander

  • 1 onion, chopped

  • 5 dried red chilies

  • 1 tomato, skinned

  • 5ml/1 onion, chopped

  • 5ml/1 tsp cumin seeds

  • 2.5ml/1/2 tsp ground turmeric

  • 1 chicken, skinned and cut into 4

  • 45ml/3 tbsp ghee


Method:

  1. Grind all the seasoning ingredients to a paste. Make several slashes on either side of the chicken and rub in the paste. Marinate for 3 hours.

  2. Heat the ghee and fry the chicken over a medium heat for about 1 hour until tender and browned.
