Chicken
Ingredients

225g/8 oz chopped fresh
coriander
-
1 onion, chopped
-
5 dried red chilies
-
1 tomato, skinned
-
5ml/1 onion, chopped
-
5ml/1 tsp cumin seeds
-
2.5ml/1/2 tsp ground turmeric

1 chicken, skinned and cut into

45ml/3 tbsp ghee
Method:
-
Grind all the seasoning
ingredients to a paste. Make several slashes on
either side of the chicken and rub in the paste.
Marinate for 3 hours.

Heat the ghee and fry the
chicken over a medium heat for about 1 hour until
tender and browned.
