Herbed Chicken
Ingredients
45 ml/3 tbsp oil
5 curry
leaves
1 green chili
2.5 cm/1 in ginger root,
chopped
5 cloves garlic, crushed
3 onions, chopped
2 tomatoes,
skinned and chopped
45 ml/3 tbsp chopped fresh
coriander (cilantro)
30 ml/2 tbsp tomato puree
(paste)
5 ml/ 1 tsp chopped fresh basil
5 ml/1 tsp oregano
salt and
pepper
1 chicken, skinned and cut into
portions
2 potatoes, sliced
100 g/4 oz peas
Method:
Heat the oil and fry the
curry and chili for 1 minute. Add the ginger and
garlic and cook for 2 minutes, stirring.
Add the onions and fry
until golden. Add the tomatoes, coriander,
tomato puree, basil, oregano, salt and pepper
and fry until the oil appears on the surface.
Add the chicken, potatoes and
peas and enough water almost to cover the chicken.
Cover and simmer gently for about 40 minutes until
the chicken is tender and the sauce has thickened.
