Poultry Recipes - Kerala Fried Duck

Ingredients

  • 1 duck, skinned and cut into portions

  • 15 ml/1 tbsp chili powder

  • 5 ml/ 1 tbsp black pepper

  • 5 ml/1 tsp ground coriander ( cilantro)

  • 2.5 ml/1/2 tsp ground turmeric

  • 1.5 ml/1/2 tsp ground cloves

  • 1.5 ml/1/2 tsp ground cinnamon

  • 1 l/1 3/4 pts/4 1/4 cups water

  • 1 egg, beaten

  • 100 g/4 oz/1 cup breadcrumbs

  • 60 ml/4 tbsp ghee

  • 30 ml/2 tbsp grated (shredded) coconut

  • 1 lemon, sliced


Method:

  1. Place the duck in a pan with the spices and water. Bring to the boil then simmer for about 40 minutes until the water has evaporated and the duck is tender.

  2. Dip each piece of suck in egg then in breadcrumbs. Heat the ghee and fry the duck until golden brown on all sides.

  3. Serve garnished with grated coconut and lemon slices.
