Mushroom Chicken
Ingredients
1 chicken, skinned and cut into
portions
50 g/2 oz/1/2 cup plain (
all-purpose) flour
45 ml/3 tbsp butter
4 onions,
sliced
3 cloves garlic, crushed
2
green (bell) peppers, chopped
4 tomatoes,
skinned and chopped
30 ml/2 tbsp tomato puree
(paste)
5 ml/1 tsp chopped fresh oregano
225 g/8oz
mushrooms, halved
Method:
Dust the chicken
with the flour. Heat the butter and fry
the chicken until lightly browned then
remove from the pan. Add the onions and
garlic and fry until the onions are
soft.
Add the remaining ingredients
except the chicken and mushrooms. Cook
for 7-8 minutes, stirring
occasionally. Add the chicken, cover and
simmer gently for about 30 minutes until the
chicken is tender.
Add the mushrooms, cover
and simmer for 10 minutes until the chicken is
cooked through and very tender.
