Poultry Recipes - Pahari Chicken

Ingredients

  • 30 ml/2 tbsp ghee

  • 4 green chilies, slit

  • 3 cardamom pods

  • 2.5 cm/1 in ginger root, chopped

  • 5 cloves garlic, chopped

  • 1 chicken, skinned and cut into portions

  • 1.2 l/2 pts/5 cups natural (plain) yoghurt

  • salt

  • 30 ml/2 tbsp chopped fresh coriander (cilantro)


Method:

  1. Heat the ghee and fry 2 of the chilies with the cardamom, ginger and garlic for 2 minutes. Add the chicken and fry until browned on all sides.

  2. Add the yoghurt and salt, cover and simmer gently for about 45 minutes until the chicken is tender and the gravy thick and creamy.

  3. Chop the reaming chilies and use to garnish the dish with the coriander. Serve hot with rice, dal and okra.
