Poultry Recipes - Papatu with Chicken Curry

Ingredients

  • 45 ml/3 tbsp oil

  • 2 onions, sliced

  • 2 green chilies

  • 100 g/4 oz grated (shredded) coconut

  • 2.5 cm/1 in ginger root, chopped

  • 5 ml/1 tsp poppy seeds

  • 4 cloves garlic, chopped

  • 5 ml/1 tsp cumin seeds

  • 8 dried red chilies

  • 5 ml/1 tsp coriander (cilantro) seeds

  • 5 ml/1 tsp lemon juice

  • 1 chicken, skinned and cut into portions

  • salt

  • 600 ml/1 pt/2 1/2 cups water

Papatu:

  • 450 g/1lb semolina

  • 450 ml/3/4 pt/2 cups milk

  • 300 ml/1/2 pt/1 1/4 cups water

  • 50 g/2 oz grated (shredded) coconut

  • pinch of ground cardamom


Method:

  1. Heat the oil and fry 1 onion and the chilies until lightly browned. Blend the remaining ingredients except the chicken, salt and water to a smooth paste in a blender or food processor.

  2. Add the chicken to the pan and fry until browned on all sides. Add the ground spices, salt and water, bring to the bon, cover and simmer for about I hour until the chicken is tender and the sauce has thickened.

  3. Meanwhile, mix together all the papatu ingredients to a dough. Divide, into 6 flat circles, arrange in the top of a double boiler and steam for about 45 minutes. Serve with the chicken.
