Poultry Recipes - Party Chicken

Ingredients

  • 45 ml/3 tbsp oil

  • 4 onions, sliced

  • 1 chicken, skinned and cut into portions

  • 150 ml/1/4 pt/2/3 cup natural (plain) yoghurt

  • 60 ml/4 tbsp single (light) cream

  • 5 ml/1 tsp ground cardamom

  • 8 cloves garlic, chopped

  • 25 g/1 oz/1/4 cup cashew nuts, ground

  • 1 green chili, seeded and chopped

  • 1-2 drops of kewra or rose water

  • juice of 1 lime

  • 15 ml/1 tbsp chopped fresh coriander (cilantro)


Method:

  1. Heat the oil and fry the onions until golden brown. Add the chicken and fry until golden.

  2. Add all the remaining ingredients except the lime juice and coriander, bring to the boil then cover and simmer for about 40 minutes until the chicken is tender and the sauce has thickened. Stir in the lime juice and serve garnished with coriander.
