Poultry Recipes - Saucy Chicken 

Ingredients

  • 120 ml/4 fl oz/1/2 cup tomato puree (paste)

  • 5 ml/1 tsp soy sauce

  • few drops of chili sauce

  • 8 cloves garlic, chopped

  • 2.5 cm/1 in ginger root, chopped

  • 15 ml/1 tbsp chopped fresh coriander (cilantro)

  • 15 ml/1 tbsp honey

  • 1 green chili, chopped

  • salt and pepper

  • 1 chicken, skinned and cut into portions

  • 30 ml/2 tbsp oil


Method:

  1. Mix together all the ingredients except the oil and chicken. Prick the chicken all over with a fork and rub in the marinade. Leave to marinate overnight.

  2. Heat the oil and fry the chicken and marinade for about 40 minutes until the chicken is tender.
