Poultry Recipes - Shredded Chicken
Ingredients
1 chicken, skinned
1.2 l/2 pts/5 cups water
2.5ml/1/2 tsp cumin seeds
2.5ml/1/2 tsp ground coriander
2.5cm/1 in cinnamon stick
4 cloves
salt
60ml/4 tbsp ghee
4 onions, sliced
4 green chilies, sliced
15ml/1 tbsp tomato puree
5ml/1 tsp wine vinegar
Seasoning:
1 onion
2.4ml/1/2 tsp aniseeds
1.5ml/1/4 tsp cumin seeds
5cm/2 in ginger root
2 cloves garlic
Method:
Place the chicken in a pan with
the water, cumin seeds, coriander, cinnamon, cloves
and salt, bring to the boil then simmer for about 1
hour until tender.
Drain the chicken the remove
the meat from the bones and shred it. Heat the ghee
and fry the onions and chilies until well browned
then remove form the pan.
Add the chicken and fry until
lightly browned. grind together all the seasoning
ingredients and add them to the pan with the onions
and chilies.
Stir in the tomato puree and
wine vinegar and simmer until the sauce is dry.
