Poultry Recipes - Sirdari Chicken
Ingredients
15ml/1 tbsp ghee
225g/8 oz onion sliced
4 cloves garlic, sliced
2.5cm/1 in ginger root, chopped
150ml/1/4 pt/2/4 cup natural
(plain) yoghurt
350g/12 oz tomatoes, skinned
and chopped
75g/3 oz/3/4 cup aniseeds
15ml/1 tbsp blanched almonds
6 black peppercorns
1 cinnamon stick
3 cardamom pods
2.5ml/1/2 tsp chili powder
2.tml/1/2 tsp cumin seeds
2.5ml/1/2 tsp ground turmeric
1 chicken, skinned and cut into
portions
600ml/1 pt/2 1/2 cup water

Method:
Heat the ghee and fry the
onions until golden. Grind together the garlic and
ginger then add it to the pan and fry for 1 minute.
Add the yoghurt and simmer for
5 minutes. Add the tomatoes, aniseeds, almonds and
spices and simmer for 10 minutes, stirring.
Add the chicken and fry for a
few minutes until well coated in the sauce. Add he
water and salt cover and sinner over a medium heat
for about 40 minutes until the chicken is tender and
the gravy reduced to about half.
