Poultry Recipes - Sirdari Chicken

Ingredients

  • 15ml/1 tbsp ghee

  • 225g/8 oz onion sliced

  • 4 cloves garlic, sliced

  • 2.5cm/1 in ginger root, chopped

  • 150ml/1/4 pt/2/4 cup natural (plain) yoghurt

  • 350g/12 oz tomatoes, skinned and chopped

  • 75g/3 oz/3/4 cup aniseeds

  • 15ml/1 tbsp blanched almonds

  • 6 black peppercorns

  • 1 cinnamon stick

  • 3 cardamom pods

  • 2.5ml/1/2 tsp chili powder

  • 2.tml/1/2 tsp cumin seeds

  • 2.5ml/1/2 tsp ground turmeric

  • 1 chicken, skinned and cut into portions

  • 600ml/1 pt/2 1/2 cup water

  • salt


Method:

  1. Heat the ghee and fry the onions until golden. Grind together the garlic and ginger then add it to the pan and fry for 1 minute.

  2. Add the yoghurt and simmer for 5 minutes. Add the tomatoes, aniseeds, almonds and spices and simmer for 10 minutes, stirring.

  3. Add the chicken and fry for a few minutes until well coated in the sauce. Add he water and salt cover and sinner over a medium heat for about 40 minutes until the chicken is tender and the gravy reduced to about half.
