Chicken
Ingredients
225 g/8 oz papaya
1 chicken,
skinned
3 onions, chopped
2.5 cm/1 in ginger root,
chopped
3 cloves garlic, chopped
2 green chilies, chopped
4
hard-boiled (hard-cooked) eggs, chopped
50 g/2
oz/1/2 cup blanched almonds
50 g/2 oz/1/2 cup
pistachios
50 g/2 oz poppy seeds
10 ml/2
tsp garam masala
100 g/4 oz/1/2 cup ghee
2
tomatoes, skinned and chopped
300 ml/1/2 pt/1 1/4 cups
natural (plain) yoghurt 8 salt
Method:
Grind the papaya and smear it
over the chicken inside and out. Mix together 2
onions with the ginger, garlic, chilies and eggs
and use the mixture to stuff the chicken.
Grind together the almonds,
pistachios, poppy seeds and garam masala and
smear the chicken with the paste.
Heat the ghee and fry the
remaining onion until browned. Add the chicken
to the pan with the tomatoes, yoghurt and salt,
cover tightly and simmer over a medium heat for
45-60 minutes until the chicken is tender.
