Spiced Grill Chicken
Ingredients
225 g/8 oz canned tomatoes
45
ml/3 tbsp wine vinegar
5 large cloves garlic
2 dried
figs
2.5 cm/1 in ginger root,
coarsely chopped
1 small green chili
10 ml/2 tsp
garam masala
5 ml/1 tsp ground coriander
(cilantro)
5 ml/1 tsp ground roasted cumin
2.5
ml/1/2 tsp black pepper
2.5 ml/1/2 tsp ground red chili
2.5 ml/1/2 tsp ground turmeric
salt

chicken pieces, skinned and pricked with a fork
30 ml/2 tsp ghee, melted
Garnish:
225 g/8 oz small
potatoes
oil for deep-frying
2.5 ml/1/2 tsp garam masala
2.5 ml/1/2 tsp ground roasted cumin
Method:
Blend the
tomatoes, wine vinegar, garlic, figs, ginger, chili,
ground spices and salt to a smooth paste in a
blender or food processor. Rub the paste into the
chicken pieces and leave to marinate for 2
hours.
Lift the chicken
from the marinade, brush with ghee and place in a
flameproof dish. Grill under a hot grill for 10
minutes. Place the remaining marinade in a pan and
reduce over a medium heat.
Turn over the
chicken pieces, baste evenly with half the marinade,
brush with ghee and return to the grill for a
further 10 minutes.
Turn them over
again, baste with the remaining marinade and grill
under a medium-low grill and cook until golden brown
and tender, turning and basting as they
cook.Meanwhile, boil the potatoes in their jackets
then peel and deep-fry them in hot oil until golden
brown.
Sprinkle the
garnish ingredients over the chicken and serve hot
with the sautéed potatoes a vegetable pulao, Nan or
chapattis, raita and chick peas in sauce.
