Poultry Recipes - Spicy Baked Chicken

Ingredients

  • 6 chicken portions, skinned

  • 2.5 cm/1 in ginger root, grated

  • 3 cloves garlic, crushed

  • 45 ml/3 tbsp ground coriander (cilantro)

  • 15 ml/1 tbsp cumin seeds, ground

  • 250 ml/8fl oz/1 cup natural (plain) yoghurt

  • 2.5 ml/1/2 tsp garam masala

  • 2.5 ml/1/2 tsp chili powder

  • 2.5 ml/1/2 tsp mango powder

  • 45 ml/3 tbsp oil


Method:

  1. Place the chicken in a bowl then rub with the ginger and garlic. Leave to stand for 1 hour.

  2. Dry roast the coriander and cumin seeds for a few seconds then stir into the yoghurt with the garam masala, chili and mango powders. Stir into the chicken, cover and refrigerate for 24 hours.

  3. Arrange the chicken pieces in a baking dish and pour over any remaining marinade. Brush with a little oil and roast in a preheated oven at 180C°/350°F/gas mark 4 for about 1 hour until the chicken is tender.

  4. Pour off the liquid then spoon 60 ml/4 tbsp of stock over the chicken. Transfer to a hot grill and grill (broil) until browned.
