Seafood Recipes - Baked Plaice

Ingredients

  • 1 large plaice

  • salt

Stuffing:

  • 15 ml1/ tbsp ghee

  • 2 onions, finely chopped

  • 2 green chilli, finely chopped

  • 45 ml/3 tbsp chopped fresh coriander (cilantro)

  • 1 large tomato, finely chopped

  • pinch of ground turmeric

  • 5ml/1 tsp ground jaggery

  • 300 ml/1/2 pt/1 1/4 cups water

  • 5ml/1 tsp lemon juice


Method:

  1. Make a slit in one side of the fish then rub it all over with salt. Heat the ghee and fry the onions chili and coriander until golden.

  2. Add the remaining ingredients and season to taste with salt. fry until the mixture thickens and all the liquid has been absorbed.

  3. Remove from the heat. Pack the stuffing into the fish and place in a greased roasting tin.

  4. Bake in a preheated oven at 180°C/350°F/gas mark 4 for about 15 minutes until cooked through. Serve with rice.
