Seafood Recipes - Bitter Gourd Stuffed with Prawns

Ingredients

  • Bitter gourds

  • 75 ml/5 tbsp ghee

  • 225 g/8 oz peeled prawns (shrimp)

  • 1 tomato, skinned and chopped

  • juice of 1 lemon

  • salt

Masala:

  • 1 onion

  • 3 dried red chilies

  • 2.5 ml/1/2 tsp ground turmeric

  • 2.5ml/1/2 tsp coriander (cilantro) seeds

  • 4 cloves garlic


Method:

  1. Lightly scrape the gourd skins, make a split lengthways and remove the seeds. Soak in salted water for 30 minutes. Drain and pat dry.

  2. Grind all the masala ingredients to a smooth paste, adding a little water if necessary. Heat half the ghee and fry the paste for 2 minutes.  Add the prawns and tomato and cook for 5 minutes. Add the lemon juice and leave to cool.

  3. Stuff the gourds with the mixture and tie with string. Heat the remaining ghee until almost smoking and fry the gourds until the skins turn brown and crisp. Serve hot with chapattis.
