Butterfly Prawns
Ingredients

900 g/2 lb raw prawns (
shrimp), peeled
-
50 g/2 oz/1/4 cup butter
-
6 cloves garlic, crushed
-
juice of 2 lemons
-
2.5 cm/1 in ginger root,
chopped
-
15 ml/1 tbsp ground coriander
(cilantro)
-
30 ml/2 tbsp ground cumin
-
2.5 ml1/2 tsp ground cardamom
-
15 ml/1 tbsp ground turmeric
-
15 ml/1 tbsp paprika
-
5 ml/1 tsp salt
Method:
-
Split the
prawns along the inner curve and spread Bat.
Melt the butter and mix in the garlic, lemon
juice, ginger, spices and salt. Add the prawns
and marinate for 3-4
hours.
-
Grill (broil) the
prawns for about minutes until cooked then
serve immediately with the juice served
separately.
