Seafood Recipes - Butterfly Prawns

Ingredients

  • 900 g/2 lb raw prawns ( shrimp), peeled

  • 50 g/2 oz/1/4 cup butter

  • 6 cloves garlic, crushed

  • juice of 2 lemons

  • 2.5 cm/1 in ginger root, chopped

  • 15 ml/1 tbsp ground coriander (cilantro)

  • 30 ml/2 tbsp ground cumin

  • 2.5 ml1/2 tsp ground cardamom

  • 15 ml/1 tbsp ground turmeric

  • 15 ml/1 tbsp paprika

  • 5 ml/1 tsp salt


Method:

  1. Split the prawns along the inner curve and spread Bat. Melt the butter and mix in the garlic, lemon juice, ginger, spices and salt. Add the prawns and marinate for 3-4 hours.

  2. Grill (broil) the prawns for about  minutes until cooked then serve imme­diately with the juice served separately.
