Eastern Fried Fish
Ingredients

5 large cloves garlic

onions, coarsely chopped

2.5 cm/1 in ginger root

1 small
green chili
-
100 ml/3 1/2 fl oz/6 1/2 tbsp wine vinegar

5ml/1 tsp dried pomegranate
seeds

5 ml/1 tsp garam masala

5ml/1 tsp ground cumin
-
5
ml/ 1 tsp ground coriander
-
2.5ml/1/2 tsp ground red chili

salt
-
500g/18 oz cod
fillets, skinned and cut into 5 cm/2 in pieces

ml/4 tbsp oil
Method:
-
Blend the garlic, onions,
ginger, chili, wine vinegar and pomegranate
seeds to a smooth paste in a blender or food
processor.

Mix in the ground spices and
salt and rub into the fish pieces. Cover and
marinate for 2 hours. Remove the fish from the
marinade and set aside.

Place the marinade in a pan and
dry off all the liquid over a medium heat for about
30 minutes. Return the fish to the marinade and coat
the pieces evenly.

Heat the oil and fry the fish
until golden brown on all sides. Serve hot with
pulao rice, dal and a potato and bean dish.
