Seafood Recipes - Fried Prawns

Ingredients

  • 450 g/1lb peeled prawns (shrimp)

  • 100 g/4 oz/1 cup grated(shredded) coconut

  • 5 ml/1 tsp chili powder

  • 5 ml/1 tsp ground turmeric

  • 2-3 curry leaves

  • 30 ml/2 tbsp ghee

  • 1 onion, sliced


Method:

  1. Place the prawns, coconut, chili powder, turmeric and curry leaves in a pan and just cover with water.

  2. Bring to the boil then simmer gently until the sauce is thick. Meanwhile, heat the ghee and fry the onion until golden brown.

  3. Stir into the prawn mixture and serve hot with rice and vegetables.
