Seafood Recipes - Haddock Parcel

Ingredients

  • 450g/1 lb fresh coriander leaves

  • 10 green chilies

  • 600 ml/1 pt /2 1/2 cups natural (plain) yoghurt

  • salt

  • 450g/1 lb haddock fillets

  • 1 lemon , sliced


Method:

  1. Grind the coriander and chilies to a paste. Blend in the yoghurt and season with salt.

  2. Cut the fish into 4 and rub with the pate. Wrap the pieces individually in kitchen foil and place in a steamer over boiling water.

  3. Steam for about 20 minutes until the fish is tender. Garnish with lemon slices and serve hot with chapattis and rice.
