Seafood Recipes - Hot Malayalee Prawns

Ingredients

Batter:

  • 5 ml/1 tsp black peppercorns

  • 5 ml/1 tsp mustard seeds

  • 5 ml/1 tsp fenugreek

  • 15 ml/1 tbsp ground coriander (cilantro)

  • 5 ml/1 tsp ground turmeric

  • 20 dried red chilies

  • 45 ml/13 tbsp oil

  • 1 sprig fresh curry leaves

  • 10 ml/2 tsp tamarind concentrate

  • 450 g/1lb onions, finely chopped

  • 10 cloves garlic, crushed

  • 2.5 cm/1 in ginger root, chopped

  • 10 green chilies, chopped

  • 450 g/1lb peeled prawns (shrimp)

  • salt


Method:

  1. Dry roast the peppercorns, mustard seeds, fenugreek, coriander and turmeric for 1 minute then grind together.

  2. Grind the red chilies to a paste. Heat the oil and fry the curry leaves and tamarind for 1 minute. Add the onions, garlic, ginger, red chili paste and green chilies and fry for 2 minutes.

  3. Add the prawns, goon spices and slat. Cover with water and simmer until the water has been absorbed. Serve hot with rice.
