Hot Malayalee Prawns
Ingredients
Batter:
5 ml/1 tsp black peppercorns
5 ml/1 tsp mustard seeds
5 ml/1 tsp fenugreek
15 ml/1 tbsp ground coriander
(cilantro)
5 ml/1 tsp ground turmeric
20 dried red chilies
45 ml/13 tbsp oil
1 sprig fresh curry leaves
10 ml/2 tsp tamarind
concentrate
450 g/1lb onions, finely
chopped
10 cloves garlic, crushed
2.5 cm/1 in ginger root,
chopped
10 green chilies, chopped
450 g/1lb peeled prawns
(shrimp)

Method:
Dry roast the peppercorns,
mustard seeds, fenugreek, coriander and turmeric for
1 minute then grind together.
Grind the red chilies to a
paste. Heat the oil and fry the curry leaves and
tamarind for 1 minute. Add the onions, garlic,
ginger, red chili paste and green chilies and fry
for 2 minutes.
Add the prawns, goon spices
and slat. Cover with water and simmer until the
water has been absorbed. Serve hot with rice.
