Seafood Recipes - Lobster Curry

Ingredients

  • 15 mill tbsp ghee

  • 5 cloves garlic, crushed

  • 900 g/2 lb lobster meat

  • juice of 1 lemon

  • 5 ml/1 tsp chili powder

  • 5 ml/1 tsp ground turmeric

  • 5 ml/1 tsp sugar

  • salt

  • 15ml/1 tbsp chopped fresh coriander (cilantro)


Method:

  1. Heat the ghee and fry the garlic until lightly browned. Add the lobster and fry for 5 minutes.

  2. Add the lemon juice, chili powder, turmeric, sugar and salt, cover and simmer gently until tender, adding a little water if necessary and stirring occasionally.

  3.  Garnish with the coriander and serve hot with rice and vegetables.
