Masala-stuffed Fish
Ingredients

1 large haddock or salmon
-
juice of 3 lemons
-
salt and pepper
-
45 ml/3 tbsp
ghee
-
25 g/1 oz/1/4 cup blanched almonds
-
25 g/1 oz/3 tbsp raisins
-

spring onions (scallions), sliced
-
100 g/ 4 oz peas
-
100 g/ 4 oz mashed potatoes
-
5 ml/1 tsp ground turmeric
-

mill tsp garam masala
-
75ml/5 tbsp chopped ginger
root
-
5 green chilies, thinly sliced
-
45 ml/3 tbsp
chopped fresh mint
-
45 ml/3 tbsp chopped fresh
coriander (cilantro)

1 egg, beaten
-
45 ml/3 tbsp
mustard oil
Method:
-
Clean the fish, rub inside
and out with the juice of a lemon and sprinkle
with salt and pepper. Leave to stand for I hour.

Heat the ghee and fry the
almonds and raisins for 2 minutes then remove
from the pan. Add the onions and fry until soft.

Stir in the peas, potatoes,
turmeric, garam
masala and ginger then remove from the heat
and leave to cool. Stir in the lemon juice,
almonds, raisins, green chilies, mint and coriander. Bind the mixture with the egg and stuff
into the fish.

Tie up to hold the fish
together. Heat the mustard oil and fry the fish for
about 30 minutes until cooked through. Serve hot
with fried tomatoes and potatoes.
