Seafood Recipes - Monkfish with Mustard Seeds

Ingredients

  • 45ml/3 tbsp mustard seeds

  • 60 ml/4 tbsp water

  • 900g/2 lb monkfish fillet, cubed

  • 30 ml/2 tbsp plain ( all-purpose) flour

  • 60ml/ 4 tbsp oil

  • 1 onion, sliced

  • 300ml/1/2 pt/1 1/4 cups natural (plain) yoghurt

  • 2 cloves garlic, crushed

  • 15ml/1 tbsp lemon juice

  • salt and pepper

  • 15ml/1 tbsp chopped fresh coriander (cilantro)


Method:

  1. Soak the half the mustard seeds in the water for 3 hours. Grind the remainder and toss the fish in the seeds.

  2. Heat the oil and fry the onion until golden. Drain the seeds and add to the pan with fish. Fry for 3 minutes.

  3. Stir in the yoghurt, garlic, lemon juice, salt and pepper, bring to the boil then simmer for 15 minutes until tender. Serve garnished with coriander.
