Seafood Recipes - Plaice Parcels

Ingredients

  • 1/2 coconut, grated (shredded)

  • 1 bunch fresh mint leaves

  • 1 bunch fresh coriander (cilantro)

  • 10 green chilies

  • 10 cloves garlic

  • 5 ml/1 tsp sugar

  • 1 large onion

  • 30 ml/2 tbsp cumin seeds

  • salt

  • 675 g/1 1/2 lb plaice fillets

  • juice of 2 lemons

  • 30 ml/2 tbsp ghee


Method:

  1. Slice the fish into 6 pieces. Puree the garlic, chilies and cumin seeds to a smooth paste in a blender or food processor.

  2. Heat the ghee and fry the onions until golden. Add the ground spices and fry for 2 minutes. Add the water, bring to the boil and simmer for 10 minutes.

  3. Blend the Dour to a smooth paste with a little water then Puree the coconut, mint, coriander, chilies, garlic, sugar, onion, cumin seeds and salt to a fine paste in a blender or food processor.

  4. Cut the fish into about 6 pieces and lay each piece on a piece of kitchen foil. Rub the fish with the ground paste, sprinkled with lemon juice and dot with ghee.

  5. Wrap the foil around the fish, arrange in a baking tin and bake in a preheated oven at 200°C/400°F/gas mark 6 for about 15 minutes until cooked. Serve with rice and dal.
