Plaice Parcels
Ingredients

1/2 coconut, grated (shredded)
-
1 bunch fresh mint leaves
-
1 bunch fresh coriander
(cilantro)
-
10 green chilies
-
10 cloves garlic
-
5 ml/1 tsp
sugar
-
1 large onion
-
30 ml/2 tbsp cumin seeds
-
salt
-
675 g/1 1/2 lb plaice fillets
-
juice of 2 lemons
-
30 ml/2 tbsp ghee
Method:

Slice the fish into 6
pieces. Puree the garlic, chilies and cumin
seeds to a smooth paste in a blender or food
processor.

Heat the ghee and fry the
onions until golden. Add the ground spices and fry
for 2 minutes. Add the water, bring to the boil and
simmer for 10 minutes.

Blend the Dour to a smooth
paste with a little water then Puree the coconut,
mint, coriander, chilies, garlic, sugar, onion,
cumin seeds and salt to a fine paste in a blender
or food processor.

Cut the fish into about 6
pieces and lay each piece on a piece of kitchen
foil. Rub the fish with the ground paste, sprinkled
with lemon
juice and dot with ghee.

Wrap the foil
around the fish, arrange in a baking tin and bake in
a preheated oven at 200°C/400°F/gas mark 6 for about
15 minutes until cooked. Serve with rice and dal.
