Recipes - Prawn and Bitter Gourd
Ingredients
450g/1 lb bitter gourd or
cucumber
6 dried red chilies
2.5ml/1/2 tsp cumin seeds
5ml/1 tsp ground turmeric
5ml/1 tsp tamarind concentrate
15ml/1 tbsp ghee
30ml/2 tbsp coconut oil
2 green chilies, chopped
2.5cm/1 in ginger roots,
chopped
3 cloves garlic, chopped
30ml/2 tbsp white wine vinegar
salt
450g/1 lb peeled prawns
(shrimp)
100g/4oz ground jaggery
Method:
Cut the gourd or cucumber into
thick slices and remove the seeds and pith. Grind
the chilies, rumin seeds, turmeric and tamarind to
a paste.
Heat the ghee and oil and fry
the green chilies, ginger rand garlic for 2 minutes.
Add the e ground spices and wine vinegar and season
to taste with salt.
Bring to the boil. Add the
bitter gourd and simmer gently for 5 minutes. Add
the prawns and simmer for 5 minutes. Stir in the
jaggery and serve hot with rice and a vegetable
dish.
