Seafood Recipes - Prawn and Bitter Gourd

Ingredients

  • 450g/1 lb bitter gourd or cucumber

  • 6 dried red chilies

  • 2.5ml/1/2 tsp cumin seeds

  • 5ml/1 tsp ground turmeric

  • 5ml/1 tsp tamarind concentrate

  • 15ml/1 tbsp ghee

  • 30ml/2 tbsp coconut oil

  • 2 green chilies, chopped

  • 2.5cm/1 in ginger roots, chopped

  • 3 cloves garlic, chopped

  • 30ml/2 tbsp white wine vinegar

  • salt

  • 450g/1 lb peeled prawns (shrimp)

  • 100g/4oz ground jaggery


Method:

  1. Cut the gourd or cucumber into thick slices and remove the seeds and pith. Grind the chilies, rumin seeds, turmeric and tamarind to  a paste.

  2. Heat the ghee and oil and fry the green chilies, ginger rand garlic for 2 minutes. Add the e ground spices and wine vinegar and season to taste with salt.

  3. Bring to the boil. Add the bitter gourd and simmer gently for 5 minutes. Add the prawns and simmer for 5 minutes. Stir in the jaggery and serve hot with rice and a vegetable dish.
