Sambol
Ingredients

450 g/1lb peeled prawns
(shrimp), chopped
-
3 green chilies, chopped
-
4 cloves garlic, chopped.

5 ml/1 tsp cumin seeds
-
5 ml/1 tsp ground turmeric.
-
salt
-
30 ml/2 tbsp ghee
-
2 onions, sliced
-
225g/8 oz spinach, chopped
-
300ml/1/2 pt/1 1/4 cups water
Method:
-
Mix the prawns,
chilies, garlic, cumin seeds, turmeric and salt.
Heat the ghee and fry the onions until soft. Add the
spinach and prawn mixture and fry for 5 minutes.

Add the water, bring to the
boil and simmer for about 5 minutes until the sauce
is thick and the ingredients are well combined,
Serve hot with plain rice.
