Seafood Recipes - Prawn with Tomato and Spinach

Ingredients

  • 30ml/2 tbsp ghee

  • 4 tomatoes, skinned and chopped

  • 1 cloves garlic, chopped

  • 3 onions, chopped

  • 2.5 ml/1/2 tsp chili powder

  • 1 green chili, slit

  • 2.5 ml/1/2 tsp garam masala

  • salt

  • 225g/8 oz spinach, chopped

  • 450 g/1lb peeled prawns (shrimp)


Method:

  1. Heat the ghee and fry the tomatoes, garlic and onions until browned. Add the chili powder, chili, garam masala and salt and fry for 2 minutes.

  2. Stir in the spinach and cook over a low heat for about 15 minutes. Stir in the prawns and cook for 3 minutes until heated through.

  3. Serve hot with rice and vegetables.
