with Tomato and Spinach
Ingredients

30ml/2 tbsp ghee
-
4 tomatoes, skinned and chopped
-
1 cloves garlic, chopped
-
3 onions, chopped
-
2.5 ml/1/2 tsp chili powder
-
1 green chili, slit
-
2.5 ml/1/2 tsp garam masala
-
salt
-
225g/8 oz spinach, chopped
-
450 g/1lb peeled prawns
(shrimp)
Method:
-
Heat the ghee and fry the
tomatoes, garlic and onions until browned. Add the
chili powder, chili, garam masala and salt and fry
for 2 minutes.

Stir in the spinach and cook
over a low heat for about 15 minutes. Stir in the
prawns and cook for 3 minutes until heated through.
-
Serve hot with rice and
vegetables.
