Seafood Recipes - Prawn Vindaloo

Ingredients

  • 30 ml/2 tbsp ghee or oil

  • 3 onions, sliced

  • 8 dried red chilies, seeded

  • 5 cloves garlic, chopped

  • 1.5 ml/1/4 tsp cumin seeds

  • 15 ml/1 tbsp ground turmeric

  • 2.5 cm/1 in ginger root

  • 5 ml/1 tsp tamarind concentrate

  • 2.5 ml/1/2 tsp mustard seeds

  • 15 ml/1 tbsp chopped fresh coriander (cilantro)

  • 60 ml/4 tbsp white wine vinegar

  • 450 g/1 lb peeled prawns (shrimp)


Method:

  1. Heat the ghee or oil and fry the onions until lightly browned. Grind the chilies, garlic, cumin seeds, turmeric, ginger, tamarind, mustard seeds and coriander to a paste with a little of the wine vinegar.

  2. Add to the pan with the remaining wine vinegar and fry for I minutes, stirring. Add the prawns and salt and mix well.

  3. Simmer for about t6 minutes, adding a little water II necessary. Serve hot or cold with rice, raita and chapattis.
