Seafood Recipes - Prawns in Coconut Milk

Ingredients

  • 45ml/3 tbsp oil

  • 5 ml/1 tsp black mustard seeds

  • 1/4 tsp asafetida

  • 1 onion, chopped

  • 5 cloves garlic, crushed

  • 2.5 cm/1 in ginger root

  • 5ml/1tsp ground turmeric

  • 2 green chilies, cut into strips

  • 12 curry leaves

  • 450 ml/3/4 pt/2 cups coconut milk

  • salt

  • 900g/2 lb peeled prawns (shrimp)


Method:

  1. Heat the oil and fry the mustard seeds until they start crackling. Add the asafetida and cook for 30 seconds then add the onion, garlic and ginger and cook until the onion is browned.

  2. Add he turmeric, chilies and curry leaves and fry for 2 minutes. Add the coconut milk ad salt and bring to a simmer.

  3. Add the prawns and simmer for about 15 minutes. Serve hot with plain rice, vegetable sambar and papadums.
