Recipes - Prawn and Pumpkin Curry
Ingredients
1/2 coconut, grated (shredded)
5 dried red chilies, crushed
15ml/1 tbsp coriander
(cilantro) seeds
5 ml/1 tsp ground turmeric
1 onion, chopped
4 cloves garlic, crushed
5 ml/2 tsp tamarind concentrate
450g/1 lb pumpkin, cubed
450 g/1lb peeled prawns
(shrimp)

Method:
Fry the coconut, chilies,
coriander, turmeric, onion, garlic and tamarind for
2 minutes then grind to a smooth paste. Place the
pumpkin in a pan with water to cover and simmer for
4 minutes.
add the prawns and simmer for 5
minutes. Add the spices and salt, bring to the boil
and simmer for 4 minutes until the ingredients are
cooked and the sauce is thick.
