Seafood Recipes - Prawn and Pumpkin Curry

Ingredients

  • 1/2 coconut, grated (shredded)

  • 5 dried red chilies, crushed

  • 15ml/1 tbsp coriander (cilantro) seeds

  • 5 ml/1 tsp ground turmeric

  • 1 onion, chopped

  • 4 cloves garlic, crushed

  • 5 ml/2 tsp tamarind concentrate

  • 450g/1 lb pumpkin, cubed

  • 450 g/1lb peeled prawns (shrimp)

  • salt


Method:

  1. Fry the coconut, chilies, coriander, turmeric, onion, garlic and tamarind for 2 minutes then grind to a smooth paste. Place the pumpkin in a pan with water to cover and simmer for 4 minutes.

  2. add the prawns and simmer for 5 minutes. Add the spices and salt, bring to the boil and simmer for 4 minutes until the ingredients are cooked and the sauce is thick.
