Seafood Recipes - Salmon Curry

Ingredients

  • 900g/2 lb salmon steaks

  • juice of 1 lemon

  • 5 ml/1 tsp ground turmeric

  • salt

  • 45 ml/3 tbsp oil

  • 1 large onion, finely chopped

  • 6 cloves garlic, crushed

  • 2.5 cm/1 in ginger root, finely chopped

  • 5ml/1 tsp poppy seeds

  • 1.5 ml/1/4 tsp crushed black peppercorns

  • 15ml/1/1 tbsp ground coriander (cilantro)

  • 10 ml/2 tsp ground cumin

  • 2.5ml/1/2 tsp chili powder

  • 1 large tomato, skinned and chopped

  • 30ml/2 tbsp chopped fresh coriander (cilantro)


Method:

  1. salmon on a plate and sprinkle 5 minutes, stirring. Add the tomato with the lemon juice, turmeric and salt. Leave to marinate for 30 minutes.

  2. Heat the oil and fry the onion, garlic and ginger until lightly browned. Add the poppy seeds and peppercorns and fry for 1 minute. Add the coriander, cumin and chili powder and cook for 5 minutes, stirring.

  3. Add the tomato and stir together well. Add the salmon and gently stir the fish into the paste.

  4. Cover and simmer for 10-15 minuets until the fish is cooked. Garnish with coriander and serve hot with plain rice.
