Seafood Recipes - Shell Prawn Curry

Ingredients

Batter:

  • 450 g/1lb raw prawns (shrimp)

  • 10 dried red chilies

  • 2 onions, chopped

  • 600 ml/1 pt/2 1/2 cups water

  • salt

  • 10 ml/2 tsp ground turmeric

  • 45 ml/3 tbsp coconut oil

  • 2-3 coriander (cilantro) leaves


Method:

  1. Remove the heads and tails from the prawns but not the shells. Grind the chilies to a powder then mix with the onions and grind to a paste.

  2. Place the prawns in a pan with the waste, a pinch of salt and the turmeric. bring to the boil and simmer for 30 minutes until the curry is almost dry.

  3. In another pan, heat the oil and fry the onions paste for 5 minutes and simmer over a low heat until it forms a thick gravy.

  4. Garnish with the coriander leaves and serve hot with rice and vegetables.
