Spicy Fish with Tomatoes
Ingredients

60ml/4
tbsp ghee
-
700 g/1 1/2 lb cod
fillets, cubed
-
5ml/1 tsp coriander (cilantro)
seeds
-
5 ml/1 tsp black peppercorns
-
1 clove garlic, crushed
-
5 ml/`
tsp ground turmeric
-
1.5ml/1/4 tsp chili powder
-
5 ml/1 tsp salt
-
4 tomatoes, skinned and chopped
-
300ml/1/2 pt/1 1/4 cups water
-
2.5 ml//2 tsp garam masala
-
15ml/1 tbsp
chopped fresh coriander (cilantro)
Method:
-
Heat the ghee and fry the fish
for 2-3 minutes then remove from the pan. Grind the
coriander seeds, peppercorns and garlic to a paste.

Add the paste to the pan with
the turmeric, chili powder and salt and fry gently
for 2 minutes. Stir in the tomatoes and water, bring
to the boil then simmer gently for 5 minutes.

Return the fish to the pan and
simmer gently for 10 minutes, shaking the pan
occasionally but not stirring. Add the garam masala,
cover and leave to stand for 2 minutes.

Serve garnished with coriander.
