Seafood Recipes - Spicy Fish with Tomatoes

Ingredients

  • 60ml/4 tbsp ghee

  • 700 g/1 1/2 lb cod fillets, cubed

  • 5ml/1 tsp coriander (cilantro) seeds

  • 5 ml/1 tsp black peppercorns

  • 1 clove garlic, crushed

  • 5 ml/` tsp ground turmeric

  • 1.5ml/1/4 tsp chili powder

  • 5 ml/1 tsp salt

  • 4 tomatoes, skinned and chopped

  • 300ml/1/2 pt/1 1/4 cups water

  • 2.5 ml//2 tsp garam masala

  • 15ml/1 tbsp chopped fresh coriander (cilantro)


Method:

  1. Heat the ghee and fry the fish for 2-3 minutes then remove from the pan. Grind the coriander seeds, peppercorns and garlic to a paste.

  2. Add the paste to the pan with the turmeric, chili powder and salt and fry gently for 2 minutes. Stir in the tomatoes and water, bring to the boil then simmer gently for 5 minutes.

  3. Return the fish to the pan and simmer gently for 10 minutes, shaking the pan occasionally but not stirring. Add the garam masala, cover and leave to stand for 2 minutes.

  4. Serve garnished with coriander.
