Recipes - Sweet and Sour Plaice
Ingredients

675 g/1 1/2 lb plaice fillets
-
45 ml/3 tbsp oil
-
25 g/1 oz/1/4 cup plain
(all-purpose) flour
-
2 egg whites, lightly beaten
-
salt and pepper
Marinade:
-
juice of 1/2 lime
-
15 ml/1 tbsp oil
-
2.5 cm/1 in ginger root, ground
-

cloves garlic, crushed
-
2.5 ml/1/2 tsp salt
-
2.5
ml/1/2 tsp black pepper
-
1.5 ml/1 tsp chili powder
Sauce:
-
30 ml/2 tbsp oil
-

dried red chili
-
10 ml/2 tsp corn-flour
(cornstarch)
-
120 ml/4 fl oz/1/2 cup water

30 ml/2 tbsp white wine vinegar
-
5 ml/1 tsp soy sauce
-
30 ml/2 tbsp
tomato puree (paste)

30 ml/2 tbsp clear honey
Method:
-
Cut the fish into large pieces
and make incisions in each with a sharp knife. Mix
together all the marinade ingredients and rub well
into the fish. Marinate for at least 30 minutes.

Heat the oil. Make a paste of
the flour, egg whites, salt and pepper. Coat the
fish in the batter and fry until golden brown. Drain
on kitchen paper.

To make the sauce, heat the oil
and fry the chili until it darkens then remove if
from the pan and discard it. Blend the corn-flour
with a little of the water then mix with the
remaining sauce ingredients.

Stir into the hot oil and bring
to the boil, stirring. Add the fish to the sauce,
cover and simmer for 10 minutes.
