Seafood Recipes - Tandoori Prawns

Ingredients

  • 900g/2 lb prawns (shrimp), peeled

  • juice of 1 lemon

  • salt

  • 2 cloves garlic, grated

  • 2.5 cm/1 in ginger root, grated

  • pinch of pepper

  • 5 ml/1 tsp paprika

  • 5 ml/1 tsp garam masala

  • 5ml/2 tsp ground roasted cumin

  • 5 ml/1 tsp ground coriander (cilantro)

  • 5ml/1 tsp ground turmeric

  • 45 ml/3 tbsp natural (plain) yoghurt

  • 75ml/5 tbsp oil


Method:

  1. Sprink1e the prawns with the lemon and salt. Puree all the remaining ingredients except 60 ml/4 tbsp of the oil. Mix with the prawns, cover and refrigerate for 1 hour.

  2. Heat the remaining oil and fry the prawns and marinade for about 5 minutes until the oil appears on the surface and the sauce is thick. Serve hot with mint chutney.
